Need a fun and delicious Halloween treat for all your fabulous witchy friends? This is a favorite we make every year. This shortbread cookie is soft and goes great with a hot drink!
Shortbread Witch Cookie Fingers
1 cup unsalted butter, softened
1/2 cups confectioners sugar
1 teaspoon vanilla extract
A few drops of green food coloring
2 cups flour
sliced almonds
In a bowl cream the softened butter and sugar till smooth in an electric mixer. Add vanilla and food coloring and combine well (You can also use almond , coconut or orange extract instead of vanilla) Gradually add flour while continuing to mix on low. With your hands form a ball with the dough. Take small piece and roll out into a long snake. This is where you get creative! Form your witch fingers however you want . I used a knife to add the detail on the knuckles, just 3 little slits, not too deep. Add an almond slice at the tip (I tuck it in the dough). Set on greased cookie sheet and bake at 350 for 9 – 11 minutes. The bottom will lightly brown. Once they are done remove from oven and leave on pan for a while to cool. They are delicate so cool well before removing from pan.
