My Weekly Pumpkin Dessert Diary

Once again I’ve made it another week…Yahoo! I guess that’s why I gave myself this challenge. I knew if I posted for the whole world to see then I must live by it, right?

This week I’m excited to share an all time favorite American dessert, ICE CREAM…pumpkin of course! It’s an easy and simple delight for any occasion especially during this Thanksgiving week.

The Maloy’s were our guests for the evening. Life is just one big adventure with these guys! You would think since we live just down the street from each other we would hang out more often but most times it’s a text or call on….Hey Heidi, how’s it going and what’s your party plans? Oh how the party planning talk makes our husbands heads spin!

SUGAR COATED PECANS

I decided to add a few sugar coated pecans, a bit of caramel sauce and a gingersnap cookie to make it complete…YUM!

Here’s a recipe to candy up those pecans.

1 egg white
1 tablespoon water
1 pound pecan halves
1 cup white sugar
3/4 teaspoon salt
1/2 teaspoon ground cinnamon
Directions:

Preheat oven to 250 degrees F (120 degrees C). Grease one baking sheet.

In a mixing bowl, whip together the egg white and water until frothy. In a separate
bowl, mix together sugar, salt, and cinnamon.

Add pecans to egg whites, stir to coat the nuts evenly. Remove the nuts, and toss
them in the sugar mixture until coated. Spread the nuts out on the prepared baking
sheet.

Bake at 250 degrees F (120 degrees C) for 1 hour. Stir every 15 minutes.

I’ve had fun with my pumpkin dessert challenge these past three weeks and I look forward to possibly trying it again next year.  For now though I’ve had my fill on pumpkin treats. I’m eager to move on to other delights in life like planning Christmas parties of course!
